You cannot try a marmot barbecue in a restaurant as it is prohibitted to eat. Some marmots carry bubonic plague lice, so eat with caution.
Nothing beats cooked seared sheep head
seared goat carcass. It is seared so that the meat would have flavor. Then you can add it to various foods for flavor.
Grilled liver grilled wrapped in fat.
Offal-internal organs of sheep and goat.
Some lamb testicles. Usually they are available only in spring. You cannot buy them in restaurants. You have to go and visit a herders family for some bowl of testicles. Yummy.
